
I made a video on TikTok showing the process of how to make a homemade version of corn flakes in response to the Kellogg’s Boycott that started April 1st. This post gained a ton of traction, with views over 15 million as of this moment! There are also close to 13,000 comments on the video, many of which stated that corn flakes are the last choice of cereal they would choose at home. So which cereal was everyone saying they would make at home? Well, General Mill’s Cinnamon Toast Crunch was among the most commonly requested.
Thankfully, making a homemade version of this tastes cereal is pretty easy! It only requires 7 ingredients and can use any flour of your choice.
It starts by making the dough. This is a process very similar to making pie crust. You want to mix the flour, salt and vanilla together then cut cold butter into it. This process can be done in a food processor or by hand.
Personally, I do not have a food processor so I just do this by hand. I also do not have a pastry blender so I get around this by grating the butter. I have found that trying to grate butter that is too cold (i.e. frozen) isn’t ideal. It is difficult to get the butter through the grater when it’s that cold so I use butter that’s refrigerator cold. This has always worked very well for me.
Once the butter is cut in, add some cold water, like a tablespoon to start, and start forming a dough ball. Keep adding a little cold water at a time until you can form a cohesive dough ball. The dough shouldn’t be dry or crumbly but it also shouldn’t be wet or sticky. If you are using fresh milled flour, you will need to give the dough time to sit to allow time for the flour to absorb the water. You may need more water than you would with regular white flour. I really enjoy this recipe with half fresh milled flour and half white flour!
At this point you can sprinkle some cinnamon on your dough ball and knead it in. This will produce a pretty cinnamon swirl through your dough!
Lightly flour your counter and roll that dough out as thin as you can! If you notice your dough is cracking and breaking, you did not add enough water. Once rolled out, brush with melted butter and coat with your cinnamon sugar topping mixture. Don’t be shy here! Coat that baby!
Cut into bite size squares. I like to use a pizza cuter for this but a knife would do just fine! Transfer the square onto a silicone or parchment paper lined baking sheet and bake at 350oF for 15-20 minutes. You want the bottoms to be golden brown. I also allowed mine to cool on the sheet.
Eat these with milk as cereal or just eat them. I won’t judge you because that’s what I did! They’re super yummy!

Homemade Cinnamon Toast Crunch
DOUGH:
1 cup cold butter – grated
2 1/2 cups of flour
1/2 salt
1-2 tsp vanilla
2-4 tbsp cold water
1/2 tbsp cinnamon
TOPPING:
1/2 cup sugar
1-2 tbsp cinnamon
4 tbsp melted butter
- In a large bowl or in your food processor, add ingredients for the dough except the water and cinnamon. Combine until the dough forms. Add a little water if necessary to make the dough form. The dough should be cohesive and not crumby but also not sticky.
- Sprinkle cinnamon on top and knead in a few times. This will give the dough a nice cinnamon swirl.
- Roll out the dough between two sheets of parchment paper. It should be VERY thin.
- Brush the dough with melted butter so it is evenly coated
- Spread the cinnamon sugar topping on top in an even coat
- Cover with parchment paper and flip over
- Repeat step 4
- Bake at 375 degrees for 15-20 minutes
Allow to cool completely before storing in a air tight container.
