I’ve been making bread for over a decade now. It has been a creative outlet as well as therapy for me over the years. And although sourdough has been all the rage since COVID and a absolutely LOVE it, there is nothing wrong with using store bought yeast for a quick bread. This is the only sandwich bread recipe you will need using store bought yeast, active dry yeast is what I use. It is a highly versatile recipe for quick, amazing sandwich bread.

Let’s talk about ingredients for this bread. The recipe calls for coconut oil and coconut sugar. You can substitute these ingredients with other ingredients such as vegetable oil and white sugar and the bread will turn out just as beautiful but it won’t taste the same. There is something magical about those coconut ingredients that, when made with white flour or other mild tasting flours (hard white or Khorasan even) give this bread the ever so slightlest pretzel taste. It is very subtle but it’s there and it’s amazing. I highly recommend if you can get your hands on coconut oil and coconut sugar, you try them in this recipe.

This recipe can also use all purpose white flour or bread flour, it doesn’t matter too much. The bread flour may give a better rise but we’re talking very minimal differences there. You can also use whole grain flours, store bought or fresh milled, this recipe will work with them! You just might need to back off how much flour you use. Especially with fresh milled flour, you do not want to add too much or it’ll make your bread dense and heavy. This sandwich bread should turn out soft, light, and airy! Depending the whole grain flours or freshly milled flours you use, the loave may not rise as much, that is normal. Espeically when using a grain such as Khorasan or Spelt. I have had great success using 100% freshly milled Khorasan wheat in this recipe but I have been results when I mix these grains with other grains such as hard red or hard white or even store bought white flour.
I get my Khorasan Wheat from Azure Standard. I buy whole wheat berries because I mill my own flour at home but they also have Khorasan Wheat Flour if that’s something you’d like to try but you don’t have a mill. I LOVE Khorasan Wheat, it is by far my favorite wheat and I use it for everything!
My favorite way to make this bread is to mix flours. I love to mix some kind of white flour with my fresh milled flour. Khorasan wheat is my favorite wheat but I also have used many other kinds such as hard white, hard red, and spelt in this recipe and they all turn out fantastic when mixed with white flour. As mentioned above, I will also sometimes mix hard white or hard red with Khorasan wheat just to give a better rise in the bread! Like I said, this recipe is versatile.
Lastly, let’s talk about stand mixers briefly. I have both a Kitchen Aid and a Bosch Universal Plus mixer. I love them both for different reasons and the reason I love my Bosch is because it is a beast! It is the machine to make bread dough. Trust me, I’ve burned the motor out of a Kitchen Aid before making bread. This recipe was designed with a Bosch in mind. A Nutrimill Artiste is a good alternative to the Bosch Universal Plus if you’re looking for a cheaper option. Nutrimill is the sister company to Bosch and they are comparable in many ways, the Artiste just doesn’t have as big of a motor in it. The attachments for the Artiste and Bosch are interchangeable which is also a cool feature of these products!

Okay, enough talking! Let’s get into it!
Perfect Sandwich Bread
Ingredients
- 3 cups warm water
- 1 1/2 tbsp active dry yeast
- 1/2 cup Coconut Sugar *
- 1/2 cup coconut oil**
- 1 egg, beaten
- 1 tbsp salt
- 7 1/2 to 8 1/2 cups of flour***
Directions
- In a stand mixer, add the warm water, active dry yeast, and coconut sugar. Mix and allow to sit for 10 minutes to allow the yeast to bloom.
- Add in the egg, coconut oil, and a couple of cups of flour, mix until the flour is incorporated
- Add in salt and mix
- Continue to add flour until the dough starts to come away and clean the sides of the bowl. NOTE: if you are using fresh milled flour, you need to allow time for the flour to sit with the wet ingredients to prevent adding too much flour. Fresh milled flour is thirsty but take awhile to absorb the mositure. Do not add too much flour!
- Once the dough is together, allow the mixer to knead the dough for 5 minutes or until it passes a windowpane test
- Let the dough rise for 30-45 minutes, unitl doubled in size
- Divide the dough into three equal pieces, roll out all the air bubbles and roll up into loaves.
- Place the dough balls into well greased loaf pans, cover and allow to rise again 30-45 minutes until doubled in size
- While the loaves are rising, preheat your oven to 380 degrees F.
- After the second rise in the pans, bake for 25-30 minutes, internal temp should be 190 degress F
- Take bread out of pans immediately and allow to cool on wire rack
- Brush top of bread with butter.

*NOTES*
- You can sub coconut sugar with white sugar
- You can sub coconut oil with vegetable oil or any mild flavor oil.
- This recipe makes a lot of dough. I have a Bosch mixer that is able to handle this load. If you have a smaller Kitchen Aid, this recipe may be too much for it to handle. In which case, you can do this by hand, you will just have to knead the dough longer.
- You can egg wash the tops of the loaves prior to baking to make the top of the bread shiny
